"On a Cold Winter's Night" Vegetarian Chili

I love a bowl of warm chili in the winter. I used to use ground turkey, but now that I'm vegetarian I've substituted the turkey for Boca Crumbles (which are also vegan).


Here's the recipe:


A splash of olive oil

1 onion, diced

2 peppers (yellow, red, or orange), diced

1 package of Boca Crumbles

1 can of kidney beans

1 can of black beans

1 28oz can of diced tomatoes

1 28 oz can of tomato sauce

1 cup of frozen corn

Chili powder

Cumin powder

Red pepper flakes

Salt and pepper

Shredded Mexican cheese for serving (or use shredded vegan cheese)

Tortilla chips for serving



1. Saute the onion and peppers in the olive oil for a few minutes.

2. Add Boca crumbles, kidney beans, black beans, diced tomatoes, tomato sauce, and corn.

3. Add spices all to your taste.

4. Top with cheese and use chips to scoop if desired. Corn bread is also a great options!
